Raw Superfood Fudge

Here is a recipe that I found on the Facebook feed of Mountain Baby a while ago.
I made it once almost exactly as in the recipe but the second time was better, because I made some changes according to my preferences in chocolate (shortly: roasted coconut. lots!). You can see in brackets my suggestions. Another suggestion is – make more changes.

Cindy's Raw Superfood Fudge

Ingredients:

225 gr. cacao paste
1 C. / 200 gr. raw coconut oil
1.5 C / 350 gr. cashew or almond butter
3/4 C / 225 gr. maple syrup or coconut syrup
2T. matcha – green tea powder
2T. maca powder
2T. baobab powder (I substituted with 1T matcha and 1T maca)
3T. / 27 gr. raw cacao powder
1/4 C. /37 gr. coconut sugar
1/2t. pink redmond salt (grey worked great for me)
1/2 C. goji bery (1-2 handful dried cranberries)
1/2 C. cacao nibs
1/2 C. pumpkin seeds (I substituted with roasted coconut flake)
1/2 C. almonds (more roasted coconut flakes)
1/2 C. cashews (roasted coconut again)
1 C coconut flakes for bedding (I suggest – roast them first)
3/4-1 C. a mixture of dried fruits and nuts of choice for topping (guess my choice…)

  • Melt in a dehydrator the cacao paste and the coconut oil.
  • Put the melted mixture in a food processor and add: nut butter, syrup, powders, sugar and salt. Process well.
  • Add the berries, fruits, nibs, seeds and nut and mix just to incorporate.
  • Sprinkle the bottom of a 9X13 inch pan (I recommend lining it with baking paper first) with 1 cup (or more) of coconut flakes.
  • Carfully pour the batter and evenly distribute but don't disturb the coconut too much (as coconuts can be nuts).
  • Sprinkle with the fruit-nuts-seed-of-choice.
  • Allow cooling and setting for a few hours in the fridge then cut into cubes and store in fridge or freezer.

If you're into coconut flakes (if not – get a grip!), I recommend the big flakes from Organic Matters. They also carry all the needed ingredients for this recipe (except for that baobab powder. I'm suspecting it's not real…).

If you tend to forget taking vitamin D supplement in winter time, I think it's a good idea to add some to your chocolate.
